Welcome to my Blog!

I have created this blog in my quest to find the perfect healthy meal. I am a bonafide carnivore, i like my steak rare, my chicken fried, and my fish fresh.. However, it has come to my attention that none of that is conducive to a healthy lifestyle or a healthy waistline. One of my very best friends is a vegetarian and has often told me i have "vegetarian" tendencies and that I am a better vegetarian than her because she hates vegetable AND meat; i find this ironic. To get to my point, i have been experimenting with recipe's, store bought items, and just plane making things up. I figure I'm not the only vegetarian out there who loves meat.. am I?

I have chose this lifestyle, mainly because i want to be around for my three kids, and someday grand kids and so on. I want to teach my children healthy choices so that good habits start now. I am slowly finding that healthily does not always mean lack of flavor. I learn something new everyday and still on a quest to find the best flavors and vegetarian ideas. Recipes!!!!

This is a mushroom burger I made myself, my kid's even loved these!! they are easy to make and oh so good!

Makes 4 Large or 6 Smaller Mushroom Veggie Burgers

Prep Time: 15 minutes

Cook Time: 15 minutes

Total Time: 30 minutes

Ingredients:

  • 3 tbsp olive oil
  • 1 1/2 lb mushrooms, roughly chopped (combination of baby bella, shiitake, and Portobello)
  • 1/2 cup finely chopped onion
  • 6 cloves minced garlic
  • 2/3 cup rolled oats
  • 1/3 cup shredded Parmesan
  • 3/4 cup seasoned breadcrumbs
  • 2 eggs, beaten
  • 1 tbsp chopped fresh parsley, or 1 tsp dried parsley flakes
  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Preparation:

Heat 1 tbsp oil in large saucepan. Saute the mushrooms, onions and garlic over medium heat for about 10 minutes, or until the liquid boils off, and the mushrooms begin to saute.

In large bowl, add mushroom mixture to oats, Parmesan, breadcrumbs, eggs, parsley, oregano, salt and pepper. Mix well. Allow to sit for 15 minutes to develop the flavors. Shape into patties. Heat 2 tbsp oil in large non-stick skillet, over medium heat. Fry patties, cooking about 5 minutes on each side, or until golden brown.

Serve with your favorite burger toppings.
